Technically, you could say they were akuma(s) [Grammar?] or youkai. Youkai means spirit (anything supernatural). Akuma means demon. Of course, it depends if the creatures are evil.
Bat = koumori
Bear = kuma
Beetle = kabutomushi
Bull = buru or oushi
Dove = hato
Dragon = ryuu
Eagle = washi
Elk = I don't know, but deer is shika
Fox = Kitsune
Frog = kaeru
Lizard = tokage or (eki, but don't use it, it might be a little old)
Mantis = tourou or kamakiri
Mole = bouhatei
Moth = ga
Ram = ohitsuji
Raven = karasu
Tiger = Tora
